Ingredients

The noodle stir fry

  • 1 package Shirataki noodles (400 grams)
  • 1 tablespoon oil
  • ½ large onion, chopped
  • 2 cloves garlic, minced
  • ½ lb chicken thighs, chopped into bite-sized pieces
  • 2 large eggs
  • cups bean sprouts
  • ¼ block firm tofu, chopped into small pieces (100 grams)
  • 3 stalks green onions
  • 3 tablespoons peanuts, chopped

The pad thai sauce

  • 2 tablespoons sugar free ketchup
  • 3 tablespoons brown sugar substitute
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce

Instructions

  1. Prepare the shirataki noodles by covering them with boiling water and letting them sit for 5 minutes before draining.
  2. Whisk together the pad thai sauce ingredients in a small bowl.
  3. In a non-stick pan, heat the oil over medium heat, then add the onion and garlic, frying for 1-2 minutes.
  4. Add the chicken and cook until no longer pink, then push to one side and add the eggs, whisking them in.
  5. Mix in the bean sprouts, tofu, and green onion stalks, then add the noodles and combine.
  6. Pour the sauce over everything, mixing well, and cook for an additional 3 minutes before serving.
