Easy Indian-Spiced Lentil Soup

Ingredients

The soup

  • tablespoon olive oil
  • 1 large red onion, diced
  • 4 stalks celery, diced
  • 1 large carrot, diced
  • 5 cloves garlic, minced
  • 26 ounces fresh tomatoes, chopped
  • 1 cup dried brown lentils
  • 1 tablespoon garam masala
  • to taste salt and pepper
  • 6 cups vegetable broth
  • 2-3 sprigs thyme
  • 1 cup kale, roughly chopped
  • 2 tablespoons lime juice

Optional toppings

  • to taste olive oil drizzle
  • to taste red wine or sherry vinegar
  • to taste red pepper flakes
  • to taste parsley or cilantro
  • to taste za'atar
  • to taste homemade croutons
  • to taste naan or crusty bread

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onions, celery, carrot, and garlic, cooking for about 8 minutes until softened.
  3. Stir in tomatoes, lentils, garam masala, salt, and pepper, then pour in vegetable broth and add thyme.
  4. Bring the soup to a boil, then reduce heat and simmer for 30 minutes until lentils are soft.
  5. Remove thyme and scoop out two cups of soup to blend until smooth.
  6. Return the blended soup to the pot and stir in kale and lime juice.
  7. Serve hot with your favorite toppings.
