Easy Indian-Spiced Lentil Soup

Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onions, celery, carrot, and garlic, cooking for about 8 minutes until softened.
- Stir in tomatoes, lentils, garam masala, salt, and pepper, then pour in vegetable broth and add thyme.
- Bring the soup to a boil, then reduce heat and simmer for 30 minutes until lentils are soft.
- Remove thyme and scoop out two cups of soup to blend until smooth.
- Return the blended soup to the pot and stir in kale and lime juice.
- Serve hot with your favorite toppings.
