Manhattan Clam Chowder

Ingredients

The base

  • pound bacon, diced
  • 4 oz onion, diced
  • 2 large garlic cloves, rough chopped
  • 4 oz carrot, rolled or chopped
  • 4 oz bell pepper, diced
  • 10 oz celery root, peeled and diced

The liquids

  • ½ cup dry white wine
  • 2 tablespoons tomato paste
  • 4 cups unsalted chicken broth
  • 14 oz can whole plum tomatoes and juice
  • 20 oz Bumble Bee whole baby clams (and liquid)
  • 8 oz bottle Bumble Bee Clam Juice

The seasonings and fats

  • ½ teaspoon dried thyme
  • 2 leaves bay leaves
  • 6 tablespoons butter (ghee or good olive oil)
  • ¼ cup chopped fresh parsley
  • to taste salt
  • to taste pepper

Instructions

  1. Peel and dice the celery root and bacon.
  2. Cook the bacon in a pot until crispy, then add the diced onion, garlic, bell pepper, carrot, and celery root.
  3. Pour in the wine and let the vegetables sweat for a few minutes.
  4. Stir in the thyme, bay leaves, and tomato paste.
  5. Add the plum tomatoes and their liquid, crushing them in the pot.
  6. Pour in the chicken broth and clam juice, then bring to a boil.
  7. Reduce heat and simmer for 15 minutes.
  8. Add the clams and heat through, then stir in the butter until melted.
  9. Season with salt and pepper, and mix in the parsley before serving.
