No Potato Salad

Ingredients

The salad

  • 1 head cauliflower
  • 2 stalks celery, diced
  • 1 small red onion, finely chopped
  • 1 tablespoon parsley, finely chopped
  • 2 large hard boiled eggs, diced

The dressing

  • 2 tablespoons primal kitchen mayo
  • 1 tablespoon dijon mustard
  • ½ teaspoon celtic sea salt

Instructions

  1. Chop the cauliflower into small florets.
  2. Steam the cauliflower until fork-tender and allow it to cool.
  3. In a large bowl, combine the cooled cauliflower with diced celery, onion, parsley, and eggs.
  4. Stir in the mayonnaise, mustard, and salt.
  5. Serve the salad.
