Ingredients

The soup base

  • 1 cup sweet or yellow onion, chopped
  • 1 pound tomatoes, chopped
  • 1 cup chopped red pepper
  • 4 cloves garlic, minced

The protein and veggies

  • 1 can black beans, drained and rinsed
  • 14 ounces jackfruit, canned, rinsed and shredded
  • 1 cup corn

The broth and seasonings

  • 4 cups veggie broth
  • 1 teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon chipotle pepper or smoked paprika

Optional toppings

  • to taste tortilla strips or tortilla chips
  • to taste cilantro
  • to taste green onions
  • to taste jalapeños
  • to taste sour cream
  • to taste cotija or feta cheese, dairy-free if vegan
  • to taste avocado
  • to taste limes

Instructions

  1. Sauté the onion, salt, and oil or broth until the onions are soft and browning.
  2. Add the tomatoes, pepper, garlic, and spices, cooking until the tomatoes release their liquid.
  3. Transfer the mixture to a blender and pulse to your desired smoothness.
  4. In a pot, cook the black beans, jackfruit, and corn until slightly browned.
  5. Stir in the puréed tomato mixture and broth, then simmer for about 15 minutes.
  6. Serve with your choice of toppings.
