Ingredients

The soup

  • 3 tbsp Unsalted butter
  • 2 cloves Garlic (minced)
  • 4 ½ cups Asparagus (cut into ½-inch pieces)
  • 3 ½ cups Chicken broth (reduced sodium)
  • 1 tsp Sea salt
  • 1 tsp Black pepper
  • 1 cup Heavy cream

Optional garnishes

  • to taste Sour cream
  • to taste Fresh dill

Instructions

  1. Melt the butter in a Dutch oven over medium heat and sauté the garlic until fragrant.
  2. Add the asparagus and sauté until it turns bright green.
  3. Pour in the chicken broth, salt, and pepper, then bring to a boil. Reduce heat and simmer until asparagus is soft.
  4. Blend the soup until smooth using a high-powered blender or immersion blender.
  5. Return the soup to the pot, add heavy cream, and stir until heated through.
