Ingredients

The cake

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • 1 cup sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
  • cup lemon juice
  • ½ cup vegetable oil
  • zest of one lemon

The glaze

  • 1 cup powdered sugar
  • 2 tablespoons whole milk
  • ½ teaspoon lemon extract

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, sugar, butter, vanilla extract, lemon extract, and lemon juice until blended.
  4. Combine the wet and dry ingredients, then mix in the vegetable oil and lemon zest.
  5. Pour the batter into the prepared pan and bake for 45-50 minutes.
  6. Allow the cake to cool, then prepare the glaze by mixing the ingredients and pour it over the cake.
