Chicken Thigh with Mushroom Garlic Sauce

Ingredients

The chicken

  • 4 pieces chicken thighs, bone in with skin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

The sauce

  • 1 small onion
  • 3-4 cloves garlic
  • ½ teaspoon chopped thyme
  • 3 cups mushrooms
  • ½ cup chicken broth
  • cup evaporated milk
  • ½ teaspoon Cajun salt
  • to taste parsley, chopped for garnish

Instructions

  1. Preheat the oven to 175°F.
  2. Trim visible fat from the chicken and make a ½ inch slit on either side of each thigh.
  3. Season the chicken with salt and pepper on both sides.
  4. Place the chicken skin side down in a non-stick skillet over high heat.
  5. Once the chicken starts to sizzle, cover and reduce the heat to medium, cooking for 16-18 minutes.
  6. Check the chicken after 10 minutes and adjust the heat if necessary.
  7. Transfer the cooked thighs to a warm oven.
  8. Pour out excess chicken fat, leaving about 2 tablespoons in the skillet.
  9. Add onion, garlic, thyme, and mushrooms to the skillet and sauté for about 3 minutes.
  10. Add Cajun salt, chicken broth, and evaporated milk, cooking for an additional 2-3 minutes until the sauce reduces.
  11. Adjust seasonings as needed and sprinkle with parsley before serving.
