Chicken Thigh with Mushroom Garlic Sauce

Instructions
- Preheat the oven to 175°F.
- Trim visible fat from the chicken and make a ½ inch slit on either side of each thigh.
- Season the chicken with salt and pepper on both sides.
- Place the chicken skin side down in a non-stick skillet over high heat.
- Once the chicken starts to sizzle, cover and reduce the heat to medium, cooking for 16-18 minutes.
- Check the chicken after 10 minutes and adjust the heat if necessary.
- Transfer the cooked thighs to a warm oven.
- Pour out excess chicken fat, leaving about 2 tablespoons in the skillet.
- Add onion, garlic, thyme, and mushrooms to the skillet and sauté for about 3 minutes.
- Add Cajun salt, chicken broth, and evaporated milk, cooking for an additional 2-3 minutes until the sauce reduces.
- Adjust seasonings as needed and sprinkle with parsley before serving.
