Ingredients

  • 3 cups cooked couscous
  • ½ basket cherry tomatoes, halved
  • 1 medium cucumber, peeled and cut into ¼-inch pieces
  • 1 cup cooked chickpeas
  • 1 lemon cut in half
  • 1 lime cut in half
  • ¼ cup extra virgin olive oil
  • to taste fine grain sea salt
  • to taste freshly ground pepper
  • cup basil or cilantro, chopped
  • cup feta cheese, crumbled

Instructions

  1. Combine cooked couscous, cherry tomatoes, cucumber, and chickpeas in a large bowl.
  2. Squeeze lemon and lime juice into the bowl, then add olive oil, salt, and pepper.
  3. Toss the mixture well and adjust seasoning as needed.
  4. Add chopped basil and feta cheese, tossing gently to combine.
