Ingredients

The base

  • 2 tbsp olive oil
  • ½ large white onion, diced
  • 3 carrots, diced
  • 3 ribs celery, diced
  • 3 cloves garlic, minced
  • 1 lb turkey sausage

Spices and herbs

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried parsley
  • 1 tsp salt
  • 1 tsp pepper

Beans and tomatoes

  • 1 14oz can cannellini beans
  • 1 14oz can dark red kidney beans
  • 1 14oz can diced tomatoes
  • 1 15oz can tomato sauce

Broth and pasta

  • 8 cups vegetable broth
  • ¼ cup fresh parsley
  • 6 oz ditalini pasta noodles

Finishing touches

  • ¼ cup grated parmesan cheese
  • to taste more parmesan cheese
  • to taste pesto

Instructions

  1. Heat a large saucepan and add olive oil. Cook onion, carrots, and celery until tender, then add garlic and cook for another minute.
  2. Add turkey sausage and cook until browned, then stir in the spices.
  3. Add the beans, diced tomatoes, and tomato sauce. Mix well, then pour in the vegetable broth. Bring to a boil and simmer for 15-20 minutes.
  4. Stir in parsley, pasta, and parmesan cheese, and simmer for another 12 minutes. Let sit for 10 minutes before serving.
  5. Serve with additional parmesan cheese and pesto.
