Ingredients

  • 1 cup cooked quinoa
  • 100 g mushrooms, sliced
  • 200 g asparagus, cut into 1" pieces
  • 2 pieces green onions, sliced
  • 25 g sundried tomatoes, chopped
  • 15 g goat cheese, crumbled
  • 1 tsp pumpkin seeds
  • ½ tsp salt
  • ¼ tsp freshly cracked black pepper

Instructions

  1. 1. Preheat a skillet with cooking spray over high heat and cook the mushrooms until golden, about 2-3 minutes per side.
  2. 2. Add asparagus, salt, and pepper, and cook for another 1-2 minutes.
  3. 3. Stir in green onions and sundried tomatoes, cooking for an additional 1-2 minutes until asparagus is tender.
  4. 4. Combine the cooked quinoa and stir gently until heated through.
  5. 5. Serve on a plate and garnish with pumpkin seeds and goat cheese.
