Mushroom and Asparagus Warm Quinoa

Instructions
- 1. Preheat a skillet with cooking spray over high heat and cook the mushrooms until golden, about 2-3 minutes per side.
- 2. Add asparagus, salt, and pepper, and cook for another 1-2 minutes.
- 3. Stir in green onions and sundried tomatoes, cooking for an additional 1-2 minutes until asparagus is tender.
- 4. Combine the cooked quinoa and stir gently until heated through.
- 5. Serve on a plate and garnish with pumpkin seeds and goat cheese.
