Mediterranean Quinoa Wraps

The filling

The wraps

hummus

gluten-free tortillas

balsamic vinegar
Instructions
- Combine quinoa, sun-dried tomatoes, artichoke hearts, olives, lemon juice, and garlic in a medium bowl.
- Spread 1 ½ tablespoons of hummus on each tortilla.
- Add the quinoa mixture and spinach on top of the hummus.
- Drizzle with balsamic vinegar.
- Wrap tightly and use toothpicks to secure if necessary.
- Cut in half and serve or wrap in parchment paper for later.
