Ingredients

The filling

  • 1 ½ cups cooked quinoa
  • 8 pieces sun-dried tomatoes, rehydrated and chopped
  • 1 cup artichoke hearts, chopped
  • ¼ cup olives, chopped
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 cup baby spinach

The wraps

  • 8 tablespoons hummus
  • 4 pieces gluten-free tortillas
  • 4 teaspoons balsamic vinegar

Instructions

  1. Combine quinoa, sun-dried tomatoes, artichoke hearts, olives, lemon juice, and garlic in a medium bowl.
  2. Spread 1 ½ tablespoons of hummus on each tortilla.
  3. Add the quinoa mixture and spinach on top of the hummus.
  4. Drizzle with balsamic vinegar.
  5. Wrap tightly and use toothpicks to secure if necessary.
  6. Cut in half and serve or wrap in parchment paper for later.
