The Lemon Glaze

Instructions
- Preheat the oven to 350°F (180°C) and prepare a 9x5 loaf pan.
- In a mixing bowl, combine sugar, oil, lemon extract, vanilla extract, and lemon zest and mix for about 3 minutes.
- Add vegan yogurt and lemon juice, whisking until fully incorporated.
- In a separate bowl, mix flour, baking powder, and sea salt, then add to the wet ingredients and mix until just combined.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 55-60 minutes until a toothpick comes out clean.
- Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar, vegan milk, and lemon juice until combined and drizzle over the cooled loaf.
