Instructions
- Heat olive oil in a large skillet over high heat. Add ground chicken and onion, cooking until browned.
- Stir in garlic, chili powder, paprika, salt, chipotle peppers, orange juice, water, and 1 cup of pineapple. Simmer until the sauce thickens.
- In a bowl, mix the remaining pineapple, basil, jalapeño, lime juice, and a pinch of salt for the salsa.
- To serve, place fried eggs on tortillas, top with chicken mixture, pineapple-basil salsa, avocado, and cheese.
