Creamy Pumpkin Soup

Instructions
- Boil the vegetable broth or water in a large pot.
- Add the cubed pumpkin and salt, then reduce the heat to medium.
- Stir in the remaining ingredients except for the seasoning and coconut milk, cover, and cook until the pumpkin is tender, about 20 minutes.
- Remove from heat and use an immersion blender to puree the soup.
- Return to low heat, stir in the seasoning and coconut milk, and simmer uncovered for 5 minutes before serving.
