Ingredients

  • 2.5 lbs pumpkin
  • 10 cups vegetable broth
  • to taste salt
  • 2 sprigs green onions
  • ¼ teaspoon red pepper flakes
  • 1 small plummy tomato
  • 4 cloves garlic
  • 1 teaspoon Mrs. Dash herbs and lemon seasoning
  • ¼ cup coconut milk

Instructions

  1. Boil the vegetable broth or water in a large pot.
  2. Add the cubed pumpkin and salt, then reduce the heat to medium.
  3. Stir in the remaining ingredients except for the seasoning and coconut milk, cover, and cook until the pumpkin is tender, about 20 minutes.
  4. Remove from heat and use an immersion blender to puree the soup.
  5. Return to low heat, stir in the seasoning and coconut milk, and simmer uncovered for 5 minutes before serving.
