Ingredients

The batter

  • 60 g blanched almond flour
  • 40 g cassava flour
  • 1.5 tsp baking powder
  • 1 pinch sea salt
  • 2 large eggs
  • 4 Tbsp full fat coconut milk
  • ½ tsp vanilla extract
  • ¼ tsp almond extract
  • ½ tsp apple cider vinegar
  • 12 drops liquid stevia

For cooking

  • as needed coconut or avocado oil

Optional toppings

  • to taste bananas
  • to taste almond butter
  • to taste dairy-free chocolate chips
  • to taste coconut flakes

Instructions

  1. Mix the dry ingredients in a medium bowl.
  2. Whisk the wet ingredients in a small bowl.
  3. Fold the wet ingredients into the dry ingredients.
  4. Cook the mixture in a lightly greased skillet over medium heat for 2 to 2.5 minutes per side.
