Instructions
- 1. Boil water in a large pot and cook the pasta according to the package directions. Drain and return the pasta to the pot.
- 2. While the pasta is cooking, melt the butter in a medium saucepan over low heat.
- 3. Once the butter is melted, add the flour and stir for about one minute.
- 4. Whisk in the milk until the flour is fully mixed and bring to a simmer, cooking until thickened.
- 5. Stir in the pumpkin, salt, pepper, nutmeg, mustard powder, and sage.
- 6. Add the cheese and stir until melted and combined.
- 7. Pour the cheese sauce over the pasta and mix until coated.
- 8. Optionally, sprinkle pumpkin pie spice over each serving before enjoying.
