Ingredients

The pasta

  • 12 oz wheat macaroni pasta

The sauce

  • 2 tablespoons light butter
  • 2 tablespoons flour
  • 1 ½ cups skim milk
  • ¾ cup pumpkin puree
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • 1 teaspoon mustard powder
  • 1 teaspoon rubbed sage
  • 4 oz sharp cheddar cheese, shredded

Optional Garnish

  • to taste Pumpkin Pie spice

Instructions

  1. 1. Boil water in a large pot and cook the pasta according to the package directions. Drain and return the pasta to the pot.
  2. 2. While the pasta is cooking, melt the butter in a medium saucepan over low heat.
  3. 3. Once the butter is melted, add the flour and stir for about one minute.
  4. 4. Whisk in the milk until the flour is fully mixed and bring to a simmer, cooking until thickened.
  5. 5. Stir in the pumpkin, salt, pepper, nutmeg, mustard powder, and sage.
  6. 6. Add the cheese and stir until melted and combined.
  7. 7. Pour the cheese sauce over the pasta and mix until coated.
  8. 8. Optionally, sprinkle pumpkin pie spice over each serving before enjoying.
