Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking pan.
- Mix the dry ingredients in a bowl and set aside.
- Beat the eggs in a stand mixer for 5 minutes, then add sugar, pumpkin, and lemon juice.
- Combine the flour mixture with the wet ingredients and spread in the baking pan, sprinkling walnuts on top.
- Bake for 15 minutes until the cake springs back when touched.
- Turn the cake onto a powdered sugar-dusted towel and roll it up to cool.
- Prepare the filling by beating cream cheese, butter, and vanilla until smooth, then add powdered sugar.
- Unroll the cooled cake, spread the filling, roll it back up, and chill for at least 2 hours.
