Ingredients

Cake Ingredients

  • ¾ cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 3 units eggs, room temperature
  • 1 cup sugar
  • cup pure pumpkin puree
  • 1 teaspoon lemon juice
  • 1 cup walnuts, finely chopped
  • to taste unit powdered sugar

Filling Ingredients

  • 1 package cream cheese, room temperature
  • cup butter, room temperature
  • teaspoons vanilla extract
  • cups powdered sugar

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking pan.
  2. Mix the dry ingredients in a bowl and set aside.
  3. Beat the eggs in a stand mixer for 5 minutes, then add sugar, pumpkin, and lemon juice.
  4. Combine the flour mixture with the wet ingredients and spread in the baking pan, sprinkling walnuts on top.
  5. Bake for 15 minutes until the cake springs back when touched.
  6. Turn the cake onto a powdered sugar-dusted towel and roll it up to cool.
  7. Prepare the filling by beating cream cheese, butter, and vanilla until smooth, then add powdered sugar.
  8. Unroll the cooled cake, spread the filling, roll it back up, and chill for at least 2 hours.
