Sweet and Sour Shell Mac and Cheese

Ingredients

The pasta and sauce

  • 3 cups medium pasta shells
  • 2 ½ cups lowfat milk
  • 2 tablespoons unbleached flour
  • 1 ½ cups shredded sharp white cheddar cheese
  • 1 lemon zest finely grated
  • 2 teaspoons lemon juice
  • 1 orange zest finely grated
  • 1 teaspoon orange juice
  • ¾ teaspoon finely grated nutmeg
  • ¼ teaspoon salt
  • teaspoon garlic powder
  • freshly ground white or black pepper

Toppings

  • ½ cup fresh whole-wheat breadcrumbs
  • 1 teaspoon extra-virgin olive oil
  • cooking oil spray

Instructions

  1. Preheat the oven to 350°F and coat a baking dish with cooking oil spray.
  2. Cook the pasta according to package directions.
  3. In a medium saucepan, whisk together the milk and flour, and cook over medium heat until boiling, stirring constantly.
  4. Reduce the heat to low and whisk in the cheese, lemon and orange zests, nutmeg, salt, garlic powder, and pepper until the cheese melts.
  5. Stir in the lemon and orange juices, then combine the cheese sauce with the drained pasta and transfer to the prepared baking dish.
  6. In a bowl, mix the breadcrumbs with olive oil, then sprinkle over the pasta.
  7. Bake for 30 minutes until bubbling and browned on top.
