Simple Corn Salad

The dressing

Instructions
- Boil the corn in water until tender, about 5 minutes, then cool and cut off the kernels.
- Cook the diced bacon in a skillet until browned, then add green onions and mushrooms, cooking until softened.
- Combine the mushroom mixture with the corn in a bowl.
- Mix olive oil, lemon juice, and honey in a jar and shake to emulsify, then pour over the corn salad and toss.
- Season with salt and pepper, and serve warm or cold.
