Ingredients

The salad

  • 5 ears corn (shucked)
  • 2 slices bacon (diced)
  • 4 pieces green onions (white and green parts, diced)
  • 6 ounces mushrooms (fresh, diced)

The dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon honey
  • to taste salt
  • to taste pepper

Instructions

  1. Boil the corn in water until tender, about 5 minutes, then cool and cut off the kernels.
  2. Cook the diced bacon in a skillet until browned, then add green onions and mushrooms, cooking until softened.
  3. Combine the mushroom mixture with the corn in a bowl.
  4. Mix olive oil, lemon juice, and honey in a jar and shake to emulsify, then pour over the corn salad and toss.
  5. Season with salt and pepper, and serve warm or cold.
