Sake and Soy Braised Pork Belly

Instructions
- Blanch the pork belly in boiling water for a few minutes, then rinse and drain.
- Sear the pork belly in a heavy-bottomed pot until lightly browned.
- Add ginger, scallion, and garlic, cooking until fragrant.
- Stir in rock sugar, star anise, bay leaves, light soy sauce, dark soy sauce, and sake.
- Pour in enough hot water to cover the meat and bring to a boil.
- Reduce heat to medium-low, cover, and braise for 45 minutes, stirring occasionally.
- Once tender, serve immediately garnished with sliced scallions.
