Sake and Soy Braised Pork Belly

Ingredients

The pork

  • 2 pounds skin-on pork belly, cut into 1-inch chunks

Aromatics

  • 2 slices ginger, 1/4-inch thick slice, cut into thin strips
  • 2 stalks scallion, cut diagonally, about 2-inches long
  • 4 cloves garlic, crushed

Seasonings

  • 5 pieces rock sugar
  • 2 pieces star anise
  • 3 pieces bay leaves
  • 2 tablespoons light soy sauce
  • 1 teaspoon dark soy sauce
  • ½ cup sake

Liquid

  • cups hot water

Instructions

  1. Blanch the pork belly in boiling water for a few minutes, then rinse and drain.
  2. Sear the pork belly in a heavy-bottomed pot until lightly browned.
  3. Add ginger, scallion, and garlic, cooking until fragrant.
  4. Stir in rock sugar, star anise, bay leaves, light soy sauce, dark soy sauce, and sake.
  5. Pour in enough hot water to cover the meat and bring to a boil.
  6. Reduce heat to medium-low, cover, and braise for 45 minutes, stirring occasionally.
  7. Once tender, serve immediately garnished with sliced scallions.
