Hunky Heartbeet Cabbage Soup

Instructions
- Heat coconut oil in a large pot and sauté diced onion for 3 to 5 minutes.
- Add diced cabbage and beets, stir, and sauté for a few more minutes.
- Incorporate marinara sauce and water, stir to combine.
- Simmer the soup covered for 1 hour and 30 minutes to 1 hour and 45 minutes until beets are tender.
- Season with salt to taste, serve with optional Cashew Sour Cream and dill if desired.
