Hunky Heartbeet Cabbage Soup

Ingredients

The soup base

  • 2 tablespoons coconut oil
  • 2 cups diced red onion
  • 5 cups diced red cabbage
  • 4 cups peeled and diced raw beets
  • 5 cups marinara sauce
  • 3 cups water
  • to taste fine sea salt or Herbamare

Optional toppings

  • to taste Cashew Sour Cream
  • to taste fresh dill

Instructions

  1. Heat coconut oil in a large pot and sauté diced onion for 3 to 5 minutes.
  2. Add diced cabbage and beets, stir, and sauté for a few more minutes.
  3. Incorporate marinara sauce and water, stir to combine.
  4. Simmer the soup covered for 1 hour and 30 minutes to 1 hour and 45 minutes until beets are tender.
  5. Season with salt to taste, serve with optional Cashew Sour Cream and dill if desired.
