Instructions
- Line a loaf pan with parchment paper and set aside the grated zucchini in a colander.
- In a large bowl, whisk together the almond flour, oat flour, flaxseed, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, vanilla, maple syrup, and orange juice until smooth.
- Combine the wet and dry ingredients, then gently fold in the shredded zucchini and orange zest.
- Pour the batter into the prepared loaf pan, add optional orange slices on top, and bake at 350°F for 40-50 minutes.
- Let the bread cool in the pan, then remove and allow it to cool completely before slicing.
- For the optional glaze, whisk all glaze ingredients together until smooth and drizzle over the loaf before serving.
