Ingredients

The salad

  • 3 cups cooked spaghetti squash
  • ½ cup cucumber, diced
  • 1 cup diced tomatoes

  • ¼ cup fresh basil, sliced

The dressing

  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, crushed
  • 1 tsp dried oregano
  • to taste salt
  • to taste pepper

Instructions

  1. Combine the cooked spaghetti squash, diced cucumber, diced tomatoes, crumbled feta cheese, and sliced basil in a large bowl.
