Instructions
- Melt butter in a large pot over medium heat.
- Add onions and salt, sauté for 45 to 50 minutes, scraping the bottom of the pot as needed.
- Once onions are caramelized, add flour and sauté for 1 minute.
- Pour in white wine and scrape up browned bits, then add beef stock, chicken broth, thyme, and bay leaves.
- Season with salt and pepper, bring to a simmer, then reduce heat and cover, simmering for 15 to 20 minutes.
- Preheat oven to 450 degrees and prepare baguette slices by rubbing with garlic and toasting in the oven until golden.
- Remove thyme and bay leaves from the soup, then ladle soup into broil-proof bowls.
- Top each bowl with two baguette slices and sprinkle with gruyere and parmesan cheese.
- Broil until cheese is melted and serve immediately, garnished with parsley if desired.
