Soup Ingredients

  • 5 Tbsp unsalted butter
  • 3 lbs yellow onions
  • ¼ tsp salt
  • 2 Tbsp all-purpose flour
  • ¾ cup dry white wine
  • 4 cups beef stock
  • 4 cups low-sodium chicken broth
  • 1 large sprig thyme
  • 2 leaves bay leaves

Toast Ingredients

  • 12 (3/4-inch slices) baguette
  • 1 large garlic clove
  • cups shredded gruyere cheese
  • ½ cup finely shredded parmesan cheese
  • 1 Tbsp minced fresh parsley

Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onions and salt, sauté for 45 to 50 minutes, scraping the bottom of the pot as needed.
  3. Once onions are caramelized, add flour and sauté for 1 minute.
  4. Pour in white wine and scrape up browned bits, then add beef stock, chicken broth, thyme, and bay leaves.
  5. Season with salt and pepper, bring to a simmer, then reduce heat and cover, simmering for 15 to 20 minutes.
  6. Preheat oven to 450 degrees and prepare baguette slices by rubbing with garlic and toasting in the oven until golden.
  7. Remove thyme and bay leaves from the soup, then ladle soup into broil-proof bowls.
  8. Top each bowl with two baguette slices and sprinkle with gruyere and parmesan cheese.
  9. Broil until cheese is melted and serve immediately, garnished with parsley if desired.
