Instructions
- Preheat the oven to 450°F and grease a baking pan with avocado oil.
- Season the chicken with salt and pepper, then place it on the baking pan.
- Bake the chicken for 20-25 minutes until fully cooked.
- While the chicken is baking, prepare the dressing by mixing all dressing ingredients in a small bowl or jar.
- Slice the strawberries, onion, and avocados.
- In a large bowl, combine spinach and arugula, then add the strawberries and red onion.
- Toss the salad with the dressing.
- Once the chicken is done, let it cool for 5 minutes and then slice it into strips.
- Serve the salad topped with chicken, avocado, sliced almonds, and feta cheese if desired.
