Ingredients

  • 2 14-ounce cans full-fat coconut milk
  • ½ cup honey
  • ½ tsp vanilla bean powder or vanilla extract
  • a pinch sea salt
  • 1 ½ Tablespoons Vital Proteins Grass-fed Gelatin
  • ½ cup boiling water

Instructions

  1. Blend coconut milk, honey, vanilla, and sea salt until combined.
  2. Dissolve gelatin in boiling water, whisking until fully dissolved.
  3. Add the gelatin mixture to the blended coconut milk and blend again briefly.
  4. Pour the mixture into an ice cream maker and process according to the manufacturer's instructions until it reaches a soft-serve consistency.
  5. Serve immediately or freeze in a container for 2-3 hours until firm. Allow to soften at room temperature for 15-20 minutes before serving.
