Instructions
- Blend coconut milk, honey, vanilla, and sea salt until combined.
- Dissolve gelatin in boiling water, whisking until fully dissolved.
- Add the gelatin mixture to the blended coconut milk and blend again briefly.
- Pour the mixture into an ice cream maker and process according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Serve immediately or freeze in a container for 2-3 hours until firm. Allow to soften at room temperature for 15-20 minutes before serving.
