Cupcake Ingredients

  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 2 pieces eggs
  • cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ cup milk
  • ¼ cup honey
  • 1 Tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 Tbsp lemon zest

Frosting Ingredients

  • 1 8 ounce cream cheese
  • ¼ cup unsalted butter
  • cup honey
  • 3–4 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with baking cups.
  2. Cream together the butter and sugar using an electric mixer for about 2 minutes.
  3. Add the eggs one at a time, mixing until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. In another bowl, combine the milk, honey, vanilla, lemon juice, and lemon zest.
  6. Add half of the flour mixture to the butter mixture and mix until just combined.
  7. Add the milk mixture, then the remaining flour mixture, mixing until just combined.
  8. Fill the baking cups about ⅔ full and bake for 18-20 minutes until a toothpick comes out clean.
  9. Let the cupcakes cool completely on a wire rack before frosting.
  10. To make the frosting, beat the cream cheese, butter, and honey until fluffy.
  11. Gradually add powdered sugar until the desired consistency is reached, then frost the cupcakes.
