Instructions
- Preheat the oven to 350°F and line a muffin tin with baking cups.
- Cream together the butter and sugar using an electric mixer for about 2 minutes.
- Add the eggs one at a time, mixing until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the milk, honey, vanilla, lemon juice, and lemon zest.
- Add half of the flour mixture to the butter mixture and mix until just combined.
- Add the milk mixture, then the remaining flour mixture, mixing until just combined.
- Fill the baking cups about ⅔ full and bake for 18-20 minutes until a toothpick comes out clean.
- Let the cupcakes cool completely on a wire rack before frosting.
- To make the frosting, beat the cream cheese, butter, and honey until fluffy.
- Gradually add powdered sugar until the desired consistency is reached, then frost the cupcakes.
