Stuffed-Squash Blossoms Tempura

Instructions
- Mix the shallots, basil, goat cheese, ricotta, and salt and pepper in a small bowl and refrigerate.
- In a separate bowl, whisk together the egg, ice water, and flour until lumpy.
- Stuff each squash blossom with heaping teaspoons of the cheese mixture and chill.
- Heat canola oil in a large pot until ready for frying.
- Dip each blossom in the tempura batter and fry for 30 seconds on each side until crisp.
- Transfer fried blossoms to a plate lined with paper towels.
