Stuffed-Squash Blossoms Tempura

Ingredients

The filling

  • 1 small shallot, minced
  • ¼ cup basil, chopped finely
  • ¼ cup goat cheese
  • ¼ cup fresh ricotta
  • kosher salt and pepper to taste

The batter

  • 1 large egg
  • ½ cup ice water
  • ¾ cup flour

The main ingredients

  • 8 squash blossoms
  • canola oil for frying

Instructions

  1. Mix the shallots, basil, goat cheese, ricotta, and salt and pepper in a small bowl and refrigerate.
  2. In a separate bowl, whisk together the egg, ice water, and flour until lumpy.
  3. Stuff each squash blossom with heaping teaspoons of the cheese mixture and chill.
  4. Heat canola oil in a large pot until ready for frying.
  5. Dip each blossom in the tempura batter and fry for 30 seconds on each side until crisp.
  6. Transfer fried blossoms to a plate lined with paper towels.
