Creamy Truffle Pasta

Instructions
- Prepare the spaghetti according to package instructions, ensuring the water is well salted.
- In a large pot, heat the olive oil over medium heat for 20 seconds, then add the onions and cook until translucent and caramelized, about 10 minutes.
- Add the garlic and cook for an additional 5 minutes.
- Transfer the onion and garlic mixture to a mortar and pestle and grind into a paste.
- Return the paste to the pot, deglaze with lemon juice, scraping the bottom for flavor.
- Increase heat to high, add oat milk and vegetable stock, and bring to a boil.
- Once boiling, reduce to a simmer, season to taste, and add truffle oil and the corn starch-water mixture.
- Cook for about 5 minutes, stirring often, until the sauce becomes creamy.
- Taste and adjust seasoning before mixing with the pasta.
- Garnish with olives, fresh herbs, chilli flakes, nutritional yeast, and vegan parmesan before serving.
