Creamy Truffle Pasta

Ingredients

The pasta

  • ½ packet spaghetti

The sauce

  • 2 tbsp extra virgin olive oil
  • 2 large white sweet onions, finely chopped
  • 4-5 cloves garlic, finely chopped
  • 1 juice lemon
  • 1 ½ cups oat milk
  • 1 tbsp vegetable stock
  • to taste seasoning
  • 1 tsp truffle oil
  • 1 tsp corn starch
  • ¼ cup water
  • 2 tbsp nutritional yeast

Garnish

  • to taste parsley
  • to taste cilantro
  • to taste olives
  • to taste vegan parmesan cheese
  • to taste chilli flakes

Instructions

  1. Prepare the spaghetti according to package instructions, ensuring the water is well salted.
  2. In a large pot, heat the olive oil over medium heat for 20 seconds, then add the onions and cook until translucent and caramelized, about 10 minutes.
  3. Add the garlic and cook for an additional 5 minutes.
  4. Transfer the onion and garlic mixture to a mortar and pestle and grind into a paste.
  5. Return the paste to the pot, deglaze with lemon juice, scraping the bottom for flavor.
  6. Increase heat to high, add oat milk and vegetable stock, and bring to a boil.
  7. Once boiling, reduce to a simmer, season to taste, and add truffle oil and the corn starch-water mixture.
  8. Cook for about 5 minutes, stirring often, until the sauce becomes creamy.
  9. Taste and adjust seasoning before mixing with the pasta.
  10. Garnish with olives, fresh herbs, chilli flakes, nutritional yeast, and vegan parmesan before serving.
