Pesto Havarti Macaroni

Ingredients

The pasta

  • 3 cups elbow macaroni

The sauce

  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded Havarti cheese
  • 1 cup shredded sharp white cheddar cheese
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper
  • generous scoops of Pesto

Optional mix-ins

  • 1 cup frozen peas
  • ½ cup fresh basil
  • pinches of red pepper flakes

Instructions

  1. Boil salted water and cook the pasta until al dente, then drain.
  2. In a large pot, melt butter and whisk in flour to create a paste.
  3. Add milk and whisk until smooth, then increase heat and whisk until thickened.
  4. Stir in shredded cheeses and salt until melted and smooth.
  5. Combine the pasta with the cheese sauce and warm through.
  6. If using, stir in peas and serve with pesto, basil, and red pepper flakes.
