Bread-Free Stuffing Balls

Ingredients

The stuffing balls

  • 1 tablespoon extra-virgin olive oil
  • 1 package (8-ounce/225 g) cremini mushrooms
  • 3 large garlic cloves, minced
  • 2 cups stemmed kale leaves
  • ½ cup gluten-free rolled oats
  • 1 can (14-ounce/398 mL) lentils, drained and rinsed
  • 1 cup walnut halves
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried rosemary
  • cup dried cranberries, finely chopped
  • 1 tablespoon ground flax
  • 2 tablespoons water
  • 2 ½ teaspoons sherry vinegar
  • ¾ to 1 teaspoon fine sea salt
  • to taste freshly ground black pepper

The cranberry-pear sauce

  • 2 cups fresh or frozen cranberries
  • 1 large ripe pear, peeled and finely chopped
  • ½ cup pure maple syrup
  • a small pinch fine sea salt

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large pot, heat the olive oil over medium heat and add finely chopped mushrooms and minced garlic with a pinch of salt. Sauté for 6 to 8 minutes.
  3. Tear the kale into large pieces and pulse in a food processor until finely chopped. Set aside.
  4. In the same food processor, process the rolled oats until they resemble coarse flour.
  5. Add the drained lentils and walnuts to the food processor and pulse until coarsely chopped.
  6. Add herbs to the pot with mushrooms and garlic, sauté for 30 seconds, then stir in kale and chopped cranberries.
  7. Mix ground flax with water in a small cup, then add all food processor contents, vinegar, and flax mixture to the pot. Stir until combined.
  8. With wet hands, shape the mixture into 14 to 15 balls and place them on the baking sheet.
  9. Bake for 22 to 24 minutes until golden and firm.
  10. While baking, prepare the cranberry-pear sauce by combining cranberries, pear, maple syrup, and salt in a pot. Bring to a boil, then simmer for 10 to 20 minutes.
  11. Let the stuffing balls cool for 5 minutes before serving.
