Bread-Free Stuffing Balls

The cranberry-pear sauce

fresh or frozen cranberries

ripe pear, peeled and finely chopped

pure maple syrup

Instructions
- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large pot, heat the olive oil over medium heat and add finely chopped mushrooms and minced garlic with a pinch of salt. Sauté for 6 to 8 minutes.
- Tear the kale into large pieces and pulse in a food processor until finely chopped. Set aside.
- In the same food processor, process the rolled oats until they resemble coarse flour.
- Add the drained lentils and walnuts to the food processor and pulse until coarsely chopped.
- Add herbs to the pot with mushrooms and garlic, sauté for 30 seconds, then stir in kale and chopped cranberries.
- Mix ground flax with water in a small cup, then add all food processor contents, vinegar, and flax mixture to the pot. Stir until combined.
- With wet hands, shape the mixture into 14 to 15 balls and place them on the baking sheet.
- Bake for 22 to 24 minutes until golden and firm.
- While baking, prepare the cranberry-pear sauce by combining cranberries, pear, maple syrup, and salt in a pot. Bring to a boil, then simmer for 10 to 20 minutes.
- Let the stuffing balls cool for 5 minutes before serving.
