Pumpkin Flan

Ingredients

  • ¾ cup sugar
  • 3 large eggs
  • 14 ounces sweetened condensed milk
  • 15 ounces evaporated milk
  • ½ cup pumpkin puree
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Melt the sugar in a heavy saucepan over medium heat, stirring often.
  3. Once melted, reduce the heat to medium-low and stop stirring until the sugar turns amber.
  4. Transfer the caramelized sugar to a flan pan or ramekins.
  5. In a blender or using an electric mixer, blend the eggs, sweetened condensed milk, evaporated milk, pumpkin puree, and vanilla until smooth.
  6. Pour the mixture over the caramel in the flan pan.
  7. Place the flan pan in a large roasting pan and fill the roasting pan halfway with water.
  8. Bake in the preheated oven for 60 to 90 minutes until set.
  9. Remove the flan from the water bath and allow it to cool to room temperature.
  10. Chill for several hours or overnight before serving.
  11. Run a knife around the edges of the flan and invert it onto a plate to serve.
