Pumpkin Flan

Instructions
- Preheat the oven to 350°F.
- Melt the sugar in a heavy saucepan over medium heat, stirring often.
- Once melted, reduce the heat to medium-low and stop stirring until the sugar turns amber.
- Transfer the caramelized sugar to a flan pan or ramekins.
- In a blender or using an electric mixer, blend the eggs, sweetened condensed milk, evaporated milk, pumpkin puree, and vanilla until smooth.
- Pour the mixture over the caramel in the flan pan.
- Place the flan pan in a large roasting pan and fill the roasting pan halfway with water.
- Bake in the preheated oven for 60 to 90 minutes until set.
- Remove the flan from the water bath and allow it to cool to room temperature.
- Chill for several hours or overnight before serving.
- Run a knife around the edges of the flan and invert it onto a plate to serve.
