Moroccan Salad with Cilantro Orange Dressing

The dressing

water to adjust consistency
Instructions
- Cook the bulgur according to package directions, adding the dates and salt at the end to soften the dates and flavor the bulgur.
- Cool the bulgur for 20-30 minutes.
- In a food processor, blend all dressing ingredients except cilantro until smooth.
- Add cilantro to the dressing mixture and pulse a few times.
- Combine the cooled bulgur and dates with the other salad ingredients.
- Drizzle or toss with the dressing and serve immediately.
