Cherry Apricot Cake

Ingredients

  • 2 cups blanched almond flour
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup agave nectar or honey
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • cup dried cherries
  • cup dried apricots, sliced into quarters

Instructions

  1. Combine almond flour, salt, and baking soda in a large bowl.
  2. In a small bowl, mix together agave, eggs, and vanilla.
  3. Stir the wet ingredients into the dry ingredients.
  4. Gently fold in the dried cherries and apricots.
  5. Pour the batter into an 8 x 8 inch baking dish.
  6. Bake at 325°F for 30-40 minutes until golden brown and a toothpick comes out clean.
  7. Cool the cake before serving.
