Creamy Zucchini Soup

Ingredients

  • 1 tablespoon butter or ghee, or neutral oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chopped zucchini
  • 1 teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 1 ½ cups low-sodium vegetable broth or chicken broth

Instructions

  1. 1. Heat butter in a large pot over medium heat until melted.
  2. 2. Add chopped onion and sauté for 5 minutes until softened.
  3. 3. Stir in minced garlic and sauté for another 2 minutes until fragrant.
  4. 4. Add chopped zucchini, salt, and pepper; sauté for 10 minutes until zucchini is softened.
  5. 5. Pour in vegetable broth, scraping up any browned bits, and simmer for 15 minutes.
  6. 6. Remove from heat, let cool slightly, and purée the soup until smooth.
  7. 7. Adjust seasoning to taste and serve immediately.
