Instructions
- Preheat the oven to 350°F.
- In a bowl, combine the applesauce, guar gum, chia seed meal, and apple cider vinegar, and blend well.
- Add the cashew milk, vanilla liquid stevia, honey or coconut sugar, and liquified coconut oil to the mixture and blend.
- Mix in the baking soda and baking powder.
- Incorporate the almond meal flour, tapioca flour, and coconut flour into the wet mixture.
- Fold in the dried blueberries gently.
- Pour the batter into muffin cups and bake for about 22 minutes.
