Ingredients

Wet Ingredients

  • ¾ cup unsweetened applesauce
  • ½ tsp guar gum
  • 1 tbsp chia seed meal
  • 2 tsp apple cider vinegar
  • ¼ cup cashew milk
  • ½ tsp vanilla liquid stevia
  • ¼ cup honey or coconut sugar
  • ¼ cup coconut oil

Dry Ingredients

  • tsp baking soda
  • tsp baking powder
  • 1 cup almond meal flour
  • ½ cup tapioca flour
  • ½ cup coconut flour
  • ½ cup dried blueberries

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine the applesauce, guar gum, chia seed meal, and apple cider vinegar, and blend well.
  3. Add the cashew milk, vanilla liquid stevia, honey or coconut sugar, and liquified coconut oil to the mixture and blend.
  4. Mix in the baking soda and baking powder.
  5. Incorporate the almond meal flour, tapioca flour, and coconut flour into the wet mixture.
  6. Fold in the dried blueberries gently.
  7. Pour the batter into muffin cups and bake for about 22 minutes.
