Mushroom Lasagna

Ingredients

  • 2 pounds homemade pasta dough or 1 pound dried lasagna sheets
  • 6 cups mushroom ragù
  • 3 cups ricotta cheese
  • 8 leaves fresh basil
  • 1 zest lemon
  • to taste freshly grated Parmesan cheese
  • to taste extra-virgin olive oil or butter

Instructions

  1. Preheat the oven to 400°F and prepare a 13x9-inch baking pan with oil or butter and half of the lemon zest.
  2. Pre-cook the lasagna sheets in boiling salted water, then transfer them to a bowl of ice water with olive oil to cool.
  3. Layer the lasagna starting with a layer of mushroom ragù, followed by pasta, more ragù, and dollops of ricotta. Repeat until all ingredients are used, finishing with a layer of ragù, ricotta, basil, and Parmesan.
  4. Bake uncovered for 35-40 minutes until golden and bubbly. Let it rest before slicing.
