Ingredients

  • 1 large broccoli head
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon curry powder
  • 4 cups chicken broth
  • 1 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the broccoli into florets and dice the onion and garlic.
  2. In a pot, heat olive oil over medium heat and sauté the onion until translucent.
  3. Add the garlic and curry powder, cooking for another minute until fragrant.
  4. Add the broccoli and chicken broth, bringing the mixture to a boil.
  5. Reduce heat and simmer until the broccoli is tender.
  6. Stir in the coconut milk and blend the soup until smooth.
  7. Season with salt and pepper to taste before serving.
