Ingredients

The chili

  • 1 unit onion, diced
  • 1 unit jalapeño pepper, seeded and minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • ½ teaspoon ground coriander
  • 1 cup porter beer
  • 1 28-ounce can diced tomatoes
  • 3 cups cooked black beans, rinsed and drained
  • 1 small butternut squash (1 ½ pounds), peeled, seeded and cubed
  • ½ teaspoon coarse salt plus more to taste
  • ¼ teaspoon black pepper plus more to taste

Optional toppings

  • to taste unit shredded cheddar
  • to taste unit cilantro leaves
  • to taste unit chopped avocado
  • to taste unit chopped sweet onions
  • to taste unit chopped scallions
  • to taste unit sour cream
  • to taste unit Greek yogurt

Instructions

  1. Add all ingredients except toppings to the slow cooker.
  2. Cook on low for 8-10 hours.
  3. Taste and add additional salt and pepper if desired.
  4. Serve with assorted optional toppings.
