Ingredients

The cookies

  • 3 cups gluten free rolled oats
  • 1 cup blueberries
  • ½ cup gluten free all purpose flour or gluten free pancake mix
  • ¾ cup almond milk or coconut milk
  • 1 large egg (or omit for egg-free version)
  • ½ cup coconut sugar or raw sugar
  • 1 teaspoon baking powder
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ cup strawberries (chopped) or raspberries

Optional add-ins

  • 2 tablespoons plain or chocolate collagen protein powder
  • 2 tablespoons hemp seeds
  • 2 tablespoons pumpkin seeds

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. In a large bowl, combine all the ingredients, adding the strawberry slices last.
  3. Scoop out the dough onto the baking tray, spacing them 1 inch apart.
  4. Flatten the cookies slightly with the back of a cup or leave them rounded.
  5. Bake for 22-25 minutes until golden brown on the bottom.
  6. Let the cookies cool for 15 minutes before storing.
