Potato Clam Chowder

Ingredients

  • 7 oz clams
  • 5 cups water
  • 2 strips bacon
  • 1 medium onion
  • 2 tablespoons all-purpose flour
  • lb potatoes
  • ½ teaspoon garlic salt
  • ½ teaspoon dried thyme
  • teaspoon ground black pepper
  • 2 cups milk
  • 2 tablespoons fresh parsley

Instructions

  1. Boil the clams in water for 5 minutes until cooked, then drain and remove shells, reserving the water.
  2. Cook the bacon in a saucepan until crispy, then drain on paper towels.
  3. Stir-fry the onion in the same saucepan until aromatic, then add the flour and mix well.
  4. Pour in the reserved clam water, stir, and bring to a boil.
  5. Add the potatoes, garlic salt, thyme, and black pepper, then cover and simmer for 15-20 minutes until potatoes are tender.
  6. Stir in the milk and add the cooked clams, heating through.
  7. Serve topped with crispy bacon and parsley.
