Broccoli and Mushroom Quinoa

The vegetables

mushrooms, sliced

broccoli crowns, chopped finely

finely chopped fresh basil leaves
The cooking oil

extra-virgin olive oil
Instructions
- Cook the quinoa according to the package instructions.
- Heat olive oil in a large skillet over medium heat.
- Add onions, garlic, salt, and pepper; cook until softened and slightly golden, about 2 to 3 minutes.
- Add mushrooms and continue cooking until golden, about 2 to 3 minutes.
- Add broccoli and cook for about 30 seconds until vibrant green and slightly softened.
- Remove from heat and add the cooked quinoa and chopped basil.
- Stir delicately to combine and serve.
- Store leftovers in the refrigerator; serve cold or reheat before serving.
