Instructions
- Preheat the oven to 400°F and prepare a large baking sheet.
- Make the hemp seed ranch dressing by blending hemp seeds, lemon juice, water, olive oil, dijon mustard, garlic powder, nutritional yeast, salt, and pepper until smooth. Stir in green onions and dill.
- Place diced sweet potatoes on one end of the baking sheet, toss with olive oil, salt, and pepper, and roast for 15 minutes.
- After 15 minutes, add tempeh pieces to the baking sheet, toss with olive oil, salt, and pepper, and roast for another 15 minutes.
- After another 15 minutes, add brussels sprouts to the baking sheet, toss with remaining olive oil, salt, and pepper, and brush tempeh with barbecue sauce. Roast for 15 more minutes.
- Once cooked, transfer sweet potatoes, tempeh, and brussels sprouts to a serving bowl and drizzle with hemp seed ranch dressing.
