Spicy Lamb and Lentils With Herbs

Ingredients

  • 1 tablespoon vegetable oil
  • ½ pound ground lamb
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 2 cloves garlic
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon cumin seeds
  • cups cooked brown or French green lentils
  • ½ each English hothouse cucumber
  • ½ cup chopped fresh cilantro
  • ¼ cup chopped fresh parsley
  • ¾ cup plain whole-milk Greek yogurt
  • to serve flatbread
  • to serve lemon wedges

Instructions

  1. Heat oil in a skillet over medium-high heat and season the lamb with salt and pepper.
  2. Cook the lamb in an even patty until browned and crisp on one side, then turn and cook the other side.
  3. Break the lamb into small pieces and mix in garlic, red pepper flakes, and cumin, cooking until fragrant.
  4. In the same skillet, add lentils and reserved fat, season, and cook until they start to brown.
  5. Return the lamb to the skillet, combine, and warm through, then stir in cucumber, cilantro, and parsley.
  6. Serve with yogurt, topped with the lamb mixture, and garnish with additional herbs, flatbread, and lemon wedges.
