Instructions
- Prepare the seasonings by dicing the onion and mashing the garlic.
- Heat a pan over medium-high heat and add the oil.
- Sauté the onion for 2-3 minutes, then add the garlic, salt, and pepper, cooking for another 3-4 minutes.
- Shred the cooked chicken breast and add it to the pan, cooking for an additional 3-4 minutes.
- Preheat the oven to 350°F.
- Lay out the tortillas and spray both sides with oil.
- Pour ¼ jar of salsa into the bottom of an 8x8 baking dish.
- Fill each tortilla with the chicken mixture and roll them up tightly.
- Place the rolled enchiladas in the baking dish, folds-side-down.
- Pour the remaining salsa over the enchiladas and sprinkle with cheese if using.
- Bake in the oven for 20 minutes, optionally broiling for 2 minutes to brown the cheese.
- Remove from the oven, add garnishes, and serve.
