Healthy Chicken Enchiladas

Ingredients

The filling

  • 2-3 pieces Cooked Chicken Breasts
  • 1 jar Salsa Verde
  • 1 piece Onion, diced
  • 3 cloves Garlic, mashed
  • 1 tablespoon Ghee or Avocado Oil or Olive Oil
  • 6-8 pieces Tortillas, burrito-sized
  • to taste Sea Salt
  • to taste Ground Black Pepper

For garnishing

  • ¼ cup Diced Tomatoes
  • ½ piece Jalapeño, sliced
  • ½ piece Avocado, sliced
  • ½ cup Shredded Mexican Cheese

Instructions

  1. Prepare the seasonings by dicing the onion and mashing the garlic.
  2. Heat a pan over medium-high heat and add the oil.
  3. Sauté the onion for 2-3 minutes, then add the garlic, salt, and pepper, cooking for another 3-4 minutes.
  4. Shred the cooked chicken breast and add it to the pan, cooking for an additional 3-4 minutes.
  5. Preheat the oven to 350°F.
  6. Lay out the tortillas and spray both sides with oil.
  7. Pour ¼ jar of salsa into the bottom of an 8x8 baking dish.
  8. Fill each tortilla with the chicken mixture and roll them up tightly.
  9. Place the rolled enchiladas in the baking dish, folds-side-down.
  10. Pour the remaining salsa over the enchiladas and sprinkle with cheese if using.
  11. Bake in the oven for 20 minutes, optionally broiling for 2 minutes to brown the cheese.
  12. Remove from the oven, add garnishes, and serve.
