Ingredients

The chowder

  • 1 lb. boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 lb. red potatoes, cut into ½-inch cubes
  • 2 large carrots, sliced
  • 2 ribs celery, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups corn, fresh or frozen
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ¼ teaspoon black pepper
  • ½ teaspoon fine salt
  • 3 tablespoons cornstarch (optional)
  • ½ cup heavy cream
  • 4 strips crispy-cooked bacon, crumbled

Optional garnishes

  • to taste fresh thyme or parsley
  • to taste crumbled goat or shredded cheddar cheese

Instructions

  1. 1. Place the chicken, potatoes, carrots, celery, onions, garlic, and corn in the slow cooker.
  2. 2. Add broth, thyme, parsley, pepper, and salt. Stir well.
  3. 3. Cover and cook on LOW for 7-8 hours or on HIGH for 4 hours.
  4. 4. Before serving, mix cornstarch with water and stir into the soup. Cook for an additional 15-20 minutes until thickened.
  5. 5. Stir in the cream and bacon, then taste and adjust seasonings.
  6. 6. Garnish with fresh herbs and serve.
