Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in vegetable broth and bring to a boil.
- Add sliced carrots, celery, diced tomatoes, Italian seasoning, salt, and pepper.
- Reduce heat and simmer for about 10 minutes.
- Add tortellini and cook until tender, about 5-7 minutes.
- Stir in fresh spinach and cook until wilted.
- Serve hot.
