Ingredients

The dough

  • 1 ¼ cups fine ground almond flour
  • ¼ cup oat flour
  • ½ cup cane sugar
  • 1 ½ teaspoons cream of tartar
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 5 tablespoons apple sauce
  • 2 teaspoons vanilla extract

The coating

  • 2 tablespoons cane sugar
  • 1 ½ teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the dry ingredients in a bowl.
  3. Make a well in the center and add the apple sauce and vanilla.
  4. Mix until well combined.
  5. In a separate bowl, mix the coating ingredients.
  6. Form the dough into balls and roll them in the sugar mixture.
  7. Place the balls on a parchment-lined cookie sheet.
  8. Bake for 11-12 minutes until the edges are just beginning to golden.
  9. Let them cool before serving.
