The coating

Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the dry ingredients in a bowl.
- Make a well in the center and add the apple sauce and vanilla.
- Mix until well combined.
- In a separate bowl, mix the coating ingredients.
- Form the dough into balls and roll them in the sugar mixture.
- Place the balls on a parchment-lined cookie sheet.
- Bake for 11-12 minutes until the edges are just beginning to golden.
- Let them cool before serving.
