Ingredients

Dry Ingredients

  • 1 cup yellow cornmeal
  • 1 cup whole wheat pastry flour
  • 1 tablespoon baking powder
  • 2 teaspoons kosher salt

Wet Ingredients

  • 1 cup skim milk
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 tablespoon honey

Mix-ins

  • ½ cup freshly grated part-skim sharp cheddar cheese
  • ¼ cup chopped green onions
  • 2 units jalapeno peppers

Instructions

  1. Combine the dry ingredients in a bowl.
  2. In a separate bowl, mix the wet ingredients together.
  3. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Let the batter rest for 20 minutes.
  5. Stir in the cheese, jalapenos, and some green onions.
  6. Preheat the oven to 350°F and prepare an 8x8-inch pan.
  7. Pour the batter into the pan, smooth the top, and sprinkle with remaining green onions.
  8. Bake until golden and a toothpick comes out clean, about 24-29 minutes.
  9. Let cool, slice, and serve.
